Catering for the masses isn't easy at the best of times... throw in all the craziness of the holiday season and you've got yourself a real task!

Whether it's a small family on Christmas day, or a whole school of hungry students after a massive overnight tramp, Paul has some great recipes and tips for feeding the troops this festive season to share with you.

At OB we're all for recycling and reusing, so we've kept these recipes fairly open to encourage you to switch ingredients around with others that you have on hand, or - better yet - make use of all those party leftovers! Enjoy!

Citrus Mayonnaise

 

Perfect for drizzling over chargrilled or steamed asparagus!

  • 1 whole egg
  • 2-3 egg yolks
  • One tablespoon of Dijon mustard
  • Lemon and/or orange rind
  • A splash of white vinegar
  • Any fresh herbs you can get your hands on - Paul recommends basil, mint, fennel and coriander

Throw all ingredients in a blender and start blending while slowly adding your favourite oil. Blend until thick and creamy, then season. For all the sweet tooths out there: why not throw in a teaspoon of honey?

Sticky and Sweet Ham Glaze

Score the top of the ham in diamonds and stud each diamond with a clove. Baste in a decent amount of sweet chili sauce and brown sugar.

 

Hot tip: Save the ham bones and put in the freezer for winter to make a yummy ham and pea soup.

Turkey Croquettes

 

This is a good one for Boxing Day when you are rolling in leftovers. Paul recommends:

  • Fresh or leftover cooked turkey
  • Any thick sauce - leftover gravy is perfect
  • Diced vegetables - celery, carrot, leek and onion
  • Flour, whisked eggs and breadcrumbs for crumbing

 

Mix all ingredients together in a bowl and roll into cylinders. Roll in flour, egg, and breadcrumbs, twice over. Then either freeze for later or fry up if you are ready to serve now. Serve with a cranberry jelly.

Chunky Carrot Dip
  • 2 cups cooked carrot
  • 1 tablespoon toasted cumin seed
  • 1 tablespoon of honey
  • 200g feta cheese
  • Rind and juice of 1 lemon
  • Handful of mint

 

 

Place all ingredients in a blender and blitz. Serve with your favourite crackers or strips of pita bread.

Super easy and perfect for sharing!
