Anakiwa Flapjacks

Just like you're back in Anakiwa! (Makes approx. 12 hearty flapjacks)

Ingredients

1 cup (200g) butter
⅓ cup (125g) golden syrup

½ tsp baking soda
3 Tbsp (45ml) boiling water

2 cups (250g) rolled oats
½ cup (65g) sultanas
½ cup (65g) dried apricots, diced
1 cup (140g) plain flour
⅓ cup (45g) sunflower seeds
1 cup (75g) desiccated coconut
¼ cup (20g) Hubbards muesli

 

Method

 

Preheat oven to 160°C.

Melt (1) together in a saucepan over low heat, then add (2).

Mix (3) together in a large bowl, then add (1)+(2) and mix well.

Roll or scoop dough into large balls and place onto lightly greased oven trays – using a ¼ cup measuring cup as a scoop will yield about 12 flapjacks.

Flatten the flapjacks slightly and bake for 25 minutes or until golden brown.

Allow to cool completely on wire racks.
